Curried Sweet Potato Soup

INGREDIENTS
4¼ cups vegetable broth
1 cup diced onion
2 teaspoons curry powder
5 cups peeled and chopped sweet potatoes (2-3 large)
1 cup water
1 cup plus 6 tablespoons plain yogurt (nondairy if you want vegan)


DIRECTIONS
1.Heat 1/4 cup vegetable broth in a large pot over med-high heat. Add onion and curry powder and cook and stir for 2 min. Add remaining 4 cups of broth, sweet potatoes, and the water. Cook for 30 min, or until the sweet potatoes are tender. Remove from heat and let cool slightly.

2. Transfer 1/3 of the sweet potato mixture to a blender and process until smooth. Repeat the procedure until you have processed all the mixture in batches. Return the blended mixture to the pot and bring to a boil (*note...if the soup is too thick, you may need to add additional vegetable broth at this point). Remove from the heat, add 1 cup of the yogurt and stir until blended.

3. Top each serving with a dollop of yogurt and enjoy.
