Gazpacho

INGREDIENTS
3 large Tomatoes
2 Shallots or Green Onions
1 small Jalapeno Pepper, seeds removed
ΒΌ cup packed fresh Cilantro
1 Medium Cucumber

DIRECTIONS
Combine all in a food processor and pulse until blended but not smooth. Pour into a large bowl, cover and chill thoroughly before serving. Great on hot summer days!
